Prepare this splendid cheesecake trifle 1 day in advance to ensure there is sufficient time for the mango jelly to set.

  1. 2 x 85g pkts mango jelly crystals
  2. 500g cream cheese, softened
  3. 1/2 cup (110g) caster sugar
  4. 1/2 cup (125ml) passionfruit pulp (about 6 passionfruit)
  5. 600ml thickened cream
  6. 2 x 250g pkts Coles Jam Mini Rolls, cut into four portions
  7. 2 mangoes, stoned, peeled, thinly sliced
  8. Thinly sliced mango, greater, to enhance
  9. Passionfruit pulp, extra, to enhance
  10. Raspberries, to enhance
  11. 1/2 cup (110g) caster sugar
  12. 1/3 cup (25g) flaked almonds, toasted

The instruction how to make Mango and passionfruit cheesecake trifle

  1. Prepare the jelly crystals following packet instructions. Pour the jelly aggregate into 1 large square tray or 2 smaller trays. Place within the fridge for 2 hours or till just beginning to set.
  2. Use an electric mixer to conquer the cream cheese, sugar and passionfruit pulp in a bowl till clean. Beat in half of the cream on low speed until mild and fluffy.
  3. Arrange half the jam roll within the base of a 19cm x 21cm trifle bowl. Top with half the cream cheese combination and 1/2 the mango. Pour over half of the jelly combination and region inside the fridge for 1 hour or till set.
  4. Repeat with final jam rolls, cream cheese aggregate, mango and jelly aggregate. Place inside the refrigerator for 2 hours or in a single day, or till jelly is set.
  5. Meanwhile, to make the almond praline, line a baking tray with baking paper. Place the sugar and half of cup (125ml) water in a small saucepan over low heat and stir until sugar dissolves. Increase warmth to medium-high and convey to the boil. Boil, without stirring, for five-7 mins or till golden. Remove from warmth. Spread almond in a skinny layer on the coated tray. Pour over the toffee. Set aside for 15 minutes or until set. Break into shards.
  6. Use an electric mixer to overcome the remaining cream in a bowl until company peaks shape. Spoon over the trifle. Decorate with more mango, extra passionfruit pulp, raspberries and almond praline simply before serving.
