  2. 1/3 cup icing sugar mixture
  3. 1 teaspoon vanilla bean paste
  4. 300ml thickened cream
  5. 1/4 cup blackberry jam
  6. 100g digestive biscuits
  7. 40g butter, melted

  1. Using an electric mixer, beat cream cheese, sugar and vanilla till mild and fluffy. Gradually upload cream, beating until combination thickens slightly. Fold in jam to marble.
  2. Using a meals processor, method biscuits until pleasant crumbs. Add butter. Process to mix.
  3. Spoon cheese combination into 6 x 1/2-cup-capability ice-block moulds. Sprinkle with biscuit combination, pressing gently to compact. Reserve any ultimate biscuit mixture. Insert a paddle-pop stick into the centre of each mould. Place within the freezer for 6 hours or until frozen.
  4. To do away with moulds, area moulds under warm water for a few seconds. Sprinkle with reserved biscuit mixture. Serve right away
