  2. 1 cup onions chopped, about 1/2 of a medium
  3. 3/4 cup sliced leeks about 1 medium, white and light green parts only
  4. 2 sliced carrots
  5. 2 chopped celery
  6. 1 tablespoon minced ginger freshly
  7. 1 tablespoon lemongrass minced, or paste
